Green Chile Stew is my husband’s favorite! It’s traditionally made with pork but we have come to prefer it with mesquite smoked turkey. He smokes a turkey breast about once a month and always makes a pot of green chile stew with half of it. He also makes it with grilled chicken which is excellent as well if you don’t want to spend the time smoking the turkey breast.
We’ve been known to mash up the potato chunks and use the leftover stew as a base for huevos rancheros the next morning! Just reduce the liquid a little and it’s great!
Ingredients
1/2 turkey breast, smoked and cut into bite size chunks
3 russet potatoes, diced
2 carrots, diced
1 small red onion diced
2 ears of fresh corn, kernels cut off cob (grilled ones are fabulous!)
4 garlic cloves, diced finely
2 Tbs. cooking oil
1 cup of diced green chile – or more!
1/2 cup chopped cilantro – or more if you’re a fan (eliminate if you’re not a fan!)
2 cartons of chicken broth
2 tsp. garlic salt
Quickly saute the garlic in the cooking oil but do not brown it. Add broth and remaining ingredients to the pot except for the turkey and cilantro. When potatoes are done to your liking – Bub likes his a little firm – add the chicken to the pot. Cook for 5 more minutes then stir in the cilantro.
This makes a 4 quart pot full of green chile goodness!
