Asian Grilled Shrimp

For a quick and tasty meal that you can cook in your camper’s outside kitchen – try these spicy Asian grilled shrimp. Buy large enough shrimp that they won’t fall through the grill when cooking!

If you are a chile head (i.e., one who loves very spicy food), there are some pretty hot asian chiles to try! You can always crank up the heat/spice level by adding more or hotter chiles. Cook an artichoke on the grill as a side dish and you have a fun, peel-n-eat feast! If you can find head-on shrimp that’s a bonus for best taste. Try it – you might like it.

Asian Grilled Shrimp

 

 

Ingredients:

2 large shallots, finely chopped

2 inch piece of ginger, chopped

4 cloves of garlic, chopped

3/4 Cup soy sauce

1/2 Cup fresh lime juice

2 T. sugar

1/4 Cup chopped green onions

1/4 Cup peanut oil

1 tsp. red chile flakes

2 Lbs. large whole shrimp

 

Combine first 6 ingredients in a blender to mix well. Then add the green onions and begin to mix – add the peanut oil until all is well blended.  In a large bowl, add shrimp and pour the sauce over – toss to coat evenly. Let marinate on the counter for 20 minutes. Be careful to watch the time or the lime juice might cook your shrimp for you.

Remove shrimp from marinade and cook on a hot grill for 1 to 2 minutes per side. Serve with fresh limes.
