Scones are Not Scary

Scones are super easy to make and if you’re a fan of Starbucks pumpkin scones you will love these!

You’ll be wondering why it took you so long to make them.

 

Pumpkin Scones

 

Ingredients:

 

1/3 cup of sour cream

1/3 tsp. of baking soda

1 cup pumpkin

4 cups of flour

1 cup sugar

1 cup cold butter cut into chunks

1 egg

2 tsp. aking powder

1 tsp. ground cinnamon

1/2 tsp. ground nutmeg

1/4 tsp. ground ginger

1 tsp. salt

 

Spiced Glaze Icing – mix all in a bowl separately

1 cup powdered sugar

3 T. powdered sugar

2 T. whole milk

1/4 tsp. ground cinnamon

1/8 tsp. ground nutmeg

Pinch of Ginger

 

Instructions:

Combine the pumpkin and egg in a bowl.

Mix the sour cream with the baking soda in a bowl – it will poof up!

In a large bowl, whisk all the dry ingredients together to mix the spices and baking powder through out.

Cut the cold butter chunks into the dry ingredients with a pastry blender or two knives

Add the pumpkin and egg mixture and the sour cream mixture to the bowl and mix together well.

Divide the dough into 3 sections about the same size.

 

Flatten the dough into a 6″ circle about 1/4″ thick, cut into 6 wedges. Place on a well greased baking sheet and bake at 350 degrees for 20 – 25 minutes or until brown on the top and bottom. When cool, drizzle with the glaze.
